What’s on the Menu?

Leg of Lamb

Whole Roast Leg of Lamb

Our signature offering is the whole roast leg of lamb.  This dish is marinated for over six hours in yoghurt, mustard oil and aromatic spices including fenugreek, chilli, ginger and garlic as well as Zouk’s own Tikka paste, then lamb is slow-cooked to perfection until the meat is so tender that it easily falls off the bone making it the perfect dish for sharing.

In keeping with tradition, the meat is complemented by freshly-cooked greens and beautiful potatoes, burnished and gleaming, roasted in their skins. A Roast would not be complete without lashings of thick gravy and Zouk’s lamb is complemented by a full rich and glutinous gravy which has been built up simmering bones in the stock and adding spices of chili, garlic and ginger – it really makes the Zouk Special Roast zing.  Pre ordering is essential and this dish is perfect for up to 6 people.

The Secret Saji Roast Marinade

The Zouk chefs believe the secret to a great roast is all in the marinade. Zouk uses a special Saji marinade which originates from Balochistan. There are two stages to the marinade. The first stage is using to tenderise the meat. The second marinade uses tikka paste and a range of other spices to infuse the meat with flavour. You can find a tikka paste recipe here or learn tips for preparing Saji Roast Lamb from our Head Chef Mangal here.
