Piri Piri Air Fryer Chicken Drumsticks
Air Fryer Chicken Drumsticks make a great value family meal. This recipe uses Zouk Piri Piri Spice to make this affordable meal super tasty. Chicken drumsticks are cheap to buy in most supermarkets and butchers often have value packs available. Cooking them in an air fryer make this recipe speedy too but you could also use the oven or a grill or BBQ if you do not have an air fryer.
Zouk Piri Piri Spice
Piri Piri is a versatile spice mix believed to have been invented by Portuguese explorers in Mozambique. Our blend includes hot peppers that make the mix fiery and flavoursome. The spice blend can be used as a dry rub for meat, fish or vegetables by simply patting the mixture into the ingredients. To make a marinade the blend should be mixed with a little olive oil and a squeeze of lemon juice. This versatile spice blend is also delicious when sprinkled on fries, wedges, dips or snacks for a little extra kick. Ingredients for Piri Piri Air Fryer Chicken Drumsticks
- 750g Skinless Chicken Drumsticks
- 1-2 tablespoons Zouk Piri Piri Spice
- 100mls olive oil or preferred cooking oil
- Juice of half a lemon
- Salad to serve
Method for Air Fryer Chicken Drumsticks
- Heat the air fryer to 180 degrees centigrade
- Put the chicken drumsticks in a mixing bowl
- Add the Zouk Piri Piri Spice and olive oil to the mixing bowl
- Add the lemon juice and mix well
- Place the drumsticks in the air fryer – we used a Ninja – and cook them for 20 minutes until nice and crispy
- Serve with a salad and your favourite chutney or dipping sauce. We served them with our Zouk Caramelised Onion Chutney.
Alternative Serving Suggestions
The great thing about chicken drumsticks is that they are very versatile and go with almost anything. Try them with your favourite salad for a light meal or team with rice, cous cous or fries for a more substantial dinner. At lunch time pull the chicken from the bone and shred it before piling it onto a jacket potato with cheese. Alternative put the pulled chicken into a wrap for lunch on the go. If you’re a fan or meal prepping, then make extra and keep them in the fridge to rustle up a snack in minutes. The cooked drumsticks will keep in an air-tight container in the fridge for 2-3 days once cooled.
