Ingredients
• 1 tablespoon vegetable oil
• 1 teaspoon Panch Phoran (five-spice mix: cumin, fennel, mustard, nigella, fenugreek)
• 1 tablespoon crushed garlic
• 1 medium onion, diced
• 1 tablespoon crushed ginger
• 2 medium tomatoes, diced
• 1 teaspoon turmeric
• 1 teaspoon chilli powder
• 1 teaspoon ground coriander
• 1 teaspoon ground cumin
• ½ teaspoon garam masala
• 1 teaspoon paprika
• ½ teaspoon black pepper
• 1 teaspoon salt
• 500g chicken breast, diced
• 100ml water
• 1 red pepper, sliced
• 1 yellow pepper, sliced
• 1 green pepper, sliced
• 1 red onion, sliced
• 1 tablespoon onion paste (optional – for extra depth of flavour)
• ½ bunch fresh coriander, finely chopped
Method
1. Heat the oil in a large pan over medium heat.
2. Add the Panch Phoran and sauté until the seeds start to pop and sizzle.
3. Add the garlic and cook for 2 minutes until fragrant.
4. Stir in the diced onion and cook until soft and golden.
5. Add the ginger and cook for another 2 minutes.
6. Add the tomatoes and cook for 3–4 minutes until soft and starting to break down.
7. Add all the dry spices (turmeric, chilli, coriander, cumin, garam masala, paprika, black pepper and salt). Stir well and cook for 2–3 minutes to release the flavours.
8. Add the chicken pieces and cook until browned on all sides.
9. Pour in the water and simmer gently until the chicken is cooked through.
10. Add the sliced peppers and red onion, stirring well. Cook for 5–6 minutes until tender.
11. Stir in the onion paste (if using) and most of the chopped coriander. Cook for another 5 minutes.
12. Garnish with the remaining fresh coriander and serve hot with fluffy pilau rice or naan bread.
