So before we dive into the method, it’s important to make sure you have all the ingredients you need to make chicken tikka skewers. Most ingredients should be easy to find at your nearest supermarket but if you do get stuck, we suggest visiting your local Asian store. Our recipe for chicken tika skewers follows a specialised two-stage marination process, helping to ensure that your chicken tikka skewers are as tender and flavourful as possible. We will provide all ingredients you require at each specific stage of the marination process; but here is the complete list you’ll need for our chicken tikka skewer recipe:

  • 2 large chicken breasts (diced into blocks) cut and washed or (500g chicken breasts)
  • 1 ½ tbsp lemon juice
  • 1 tbsp ginger garlic paste (75% ginger & 25% garlic)
  • 1 tbsp vegetable or mustard oil
  • 1 tbsp yoghurt
  • 1 tbsp tikka paste (Why not make your own with our tikka paste recipe? Patak’s brand is good if you don’t have time to and is available from larger supermarkets or specialist Asian stores)
  • ½ tsp garam masala
  • 1 tsp ground cumin
  • 1 tsp ground coriander seed or coriander powder
  • ½ tsp ground fenugreek seed
  • ½ tbsp chilli powder
  • 2 tbsp mustard oil
  • Salt
  • Methi
  • Coriander
  • Paprika powder
  • Black pepper
  • Skewers (or kebab sticks to cook the chicken on)

Method To Make Chicken Tikka Skewers

So now you have all the ingredients you need, it’s time to get started with preparing your chicken tikka skewers. We will run you through all the necessary steps to create the perfect BBQ chicken tikka dish, including the first marination, second marination and cooking process.

First Marination

The first step of the marination process is important as it tenderises the chicken, whilst also ensuring it is more flavoursome once cooked. Please combine all of the below ingredients:

  • 2 large chicken breasts (diced into blocks) cut and washed or (500g chicken breasts)
  • 1 tbsp Lemon juice
  • 1 tbsp ginger garlic paste (75% ginger & 25% garlic)
  • 1 tbsp vegetable/mustard oil
  • Pinch of salt

Once everything has been combined, it is important to let the chicken marinate in the fridge. For best results, we would suggest leaving the chicken to marinate overnight but aim for at least an hour.

Second marination

After you have finished the first stage of the marination process, it’s time to move on to the second stage. This is where the magic really starts to happen, transforming your juicy chicken breast into stunning chicken tikka. Combine all of the ingredients below with your pre-prepared chicken:

  • 1 tbsp yoghurt
  • 1 tbsp tikka paste
  • ½ tsp salt
  • ½ tsp garam masala
  • 1 tsp ground cumin
  • 1 tsp ground coriander seed or coriander powder
  • ½ tsp ground fenugreek seed
  • ½ tbs chilli powder
  • ½ tbs lemon juice
  • 2 tbsp mustard oil
  • Methi
  • Coriander
  • Paprika powder
  • Black pepper

Mix everything together well and leave the chicken to marinate for at least 30 minutes before cooking. Now you have your chicken tikka ready and marinated, it’s time to get grilling!

Cooking process

Now it’s time to impress your guests and take your chicken tikka to the BBQ.

  1. Light your BBQ
  2. Take your marinated chicken tikka and skewer it on metal or bamboo sticks
  3. Once the coals have turned white, cook your chicken tikka skewers on the BBQ
