Traditionally this dish would be cooked in a clay oven or tandoor. However, it's easy to replicate the flavours at home with our simple recipe. As most of us don't have a clay oven at hand you'll be happy to learn this delicious dish can be cooked on a BBQ or Griddle, under a grill or even in the oven.

Ingredients for Tandoori King Prawn Recipe

To prepare our Tandoori King Prawn recipe, you will need the following ingredients. This recipe serves 4 as a starter:

  • 8 large King Prawns with tails on
  • 50 mls Mustard Oil
  • 1 tablespoon natural yoghurt
  • 2 teaspoon Zouk Tandoori Masala
  • 1 teaspoon Zouk Garam Masala
  • 1/2 teaspoon Zouk Chaat Masala
  • 1 teaspoon ginger / garlic paste
  • 1 teaspoon carom seeds
  • 1 teaspoon chilli powder
  • 1 teaspoon cumin powder
  • 1 teaspoon paprika
  • 1 teaspoon crushed coriander seeds
  • 1 teaspoon crushed black pepper
  • 1/2 teaspoon turmeric
  • 1/2 teaspoon salt
  • Juice of 1 lemon

Method for Tandoori King Prawns Recipe

Now you have all of your ingredients and equipment ready, it’s time to start preparing the Tandoori King Prawns:

1. Prepare the King prawns. Remove the shells carefully leaving the tails on and devein using a sharp knife. Set aside.
2. Prepare the ginger and garlic paste by taking 75% ginger to 25% garlic and mixing them with a small amount of water with a stick blender. Blend until a smooth paste is formed. This will keep in the fridge for several days in an airtight container if you make more than needed.
3. Take a large mixing bowl and mix together all the spices and dry ingredients with the mustard oil and yoghurt.
4. Add the prawns to the mixture and mix well so they are totally coated in the marinade. Cover and leave to marinate in a fridge for 2 to 4 hours.
5. Remove the prawns from the marinade and skewer on thin metal skewers.
6. Cook on a BBQ or pre-heated grill for 5 minutes turning frequently.
7. Serve with a squeeze of fresh lemon juice and salad.

Cooking & Serving Tips

These Tandoori King Prawns are delicious with Mint Sauce, Chilli Sauce or Mayo. Enjoy them on their own as a starter or serve them with salads and rice for a tasty main course. You can also add the cooked prawns to biryanis or curry for a more substantial meal.

When cooking, if you don't have a BBQ or grill, you can cook the king prawns in a preheated oven or on the hob on a griddle. If you don't have metal skewers then bamboo or wooden ones may be used. Remember to soak the wooden skewers first to ensure they will not burn.
